Apple Nut Muffins

These were delish especially right out from the oven & nice and warm.

3/4 cup butter
1 3/4 cups white sugar, divided
3 eggs
1 1/2 teaspoons vanilla extract
3 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1 1/2 cups sour cream
1 (21 oz.) can apple pie filling [You could use other pie fillings too... cherry, etc.]
1 cup chopped nuts (walnuts or pecans)
1/2 teaspoon of ground cinnamon

Preheat oven at 350 degrees.  Lightly grease muffin pans or line with paper liners.

In a large bowl, cream butter and 1 1/2 cups of sugar.  Beat in eggs and vanilla.  In a separate bowl, combine flour, baking powder, baking soda & salt.  Sire into the creamed mixture alternately with sour cream.  Fold in the apple pie filling and nuts.  Spoon batter into prepared muffin cups.  Combine remaining 1/4 cup sugar and cinnamon; sprinkle over the muffins.

Bake in the preheated oven for 16 to 18 minutes or until a toothpick inserted into center of a muffin comes out clean.  Makes about 18 muffins.
