Happy New Year!!

We have a very mellow & uneventful evening planned.  We're staying home, I'm making something new for dinner (I'll post it if it turns out) ;) & beating my husband at Wii games.  :P

I hope you & your families have a wonderful 2010!!

I'm looking forward to a new start & new adventures!!

Target~ Christmas and dollar section clearance

Target is sooo evil... in a good way. ;)   Our Target has 75% off their black dot stuff in the dollar section.  I got batteries for 25 cents!?!!!?!  They have some cute Disney things in that section too.

Most of the Christmas stuff is 75% off now.  I picked up a few more goodies & gifts this afternoon.  A bag of Christmas marshmellows were 29 cents or close to that.  Those would be fun in hot cocoa or to make cheap rice krispie treats too. :)

Meatball Tortellini Soup

I made this for dinner last night.  It was easy & I'll be making it again soon.  You can make this in a crockpot but I just made in on the stove.  I let it sit on the stove for about 1 hour & it was delish.

2 cups sliced carrots  [I cut up about two dozen baby carrots]
1 onion, chopped
2 cloves garlic, minced
2 (14 oz.) cans vegetable broth  [I used chicken broth]
2 (14 oz.) cans Italian style diced tomatoes, undrained
1 tsp. dried basil leaves  [I used Italian herbs instead]
1/8 tsp. pepper
Half of a large bag of frozen mini meatballs  [I made my own because I didn't have any premade]
9 oz. package frozen cheese tortellini
1/2 cup grated Parmesan cheese

Combine all ingredients except tortellini and Parmesan cheese in 3-4 quart slow cooker. Cover crockpot and cook on low for 6 hours until carrots are tender. Increase heat to high and stir in tortellini. Cover crockpot and cook for 15-20 minutes until tortellini are tender. Sprinkle with cheese and serve.

I'm already done with several birthday presents for next year!!!! :)

This is what I got for $42 and all of which is personalized... 3 sets of address labels (144 labels) and 9 sets of folding cards (25 in each set).  I couldn't go to Walmart and get cards for this cheap.

These are just two that I bought.  They are for me.  I don't want to spoil the surprise for some of my friends that read the blog. ;)

Redbox~ free movie rental

We don't have a Redbox movie rental machine close to us but if you do here is a great deal for a free movie rental.  They are always publishing free promo codes so I'll try to post them for ya.

Holiday recipes

Here are a few of the things that I cooked in the past couple of days.

--Chili Relleno Casserole
Yield: Serves 8

* 4 eggs   [I used 6 eggs]
* 1 1/2 cups milk
* 2 tablespoons all purpose flour
* 1/2 teaspoon pepper
* 1/4 teaspoon salt
* 2 7-ounce cans whole green chilies, split open  [I used one small can of diced green chilis]
* 4 cups shredded cheddar   [I only used 2 cups]
* 4 cups shredded Monterey Jack   [I only used 2 cups]

Lightly grease glass baking dish. Beat first 5 ingredients in medium bowl to blend. Arrange chilies from 1 can in prepared dish, covering bottom completely. Sprinkle with 1/3 of each cheese. Repeat layering twice. Pour egg mixture over cheese. Let stand 30 minutes. (Can be prepared 1 day ahead. Cover and refrigerate.)
Preheat oven to 350°F. Bake until casserole is slightly puffed in center and golden brown on edges, about 45 minutes. Cool 20 minutes and serve.

--Brie Cherry Pastry Cups [I've made these before but yesterday I tried raspberry jam instead.]

--Cornbread Stuffing     [I used chopped apples instead of the cherries]

--Make Ahead Mashed Potatoes  [these were good]

--Zinfandel Cranberry Sauce   This was different from your usual cranberry sauce & was delish.

--Eggnog Cookie Cups     My husband raved about these :)  The cup were a little difficult to get out of the muffin cups but they were a big hit.

Merry (belated) Christmas

I hope everyone had a wonderful Christmas.  I've been up to my eye balls in cooking, cleaning, decorating & celebrating the past few days.  Our house looks like tornado has been thru it.  We're enjoying the quiet today & trying to get things back to normal.

Old Navy~ One Day Wonder Sale

Saturday 12/26 only you can get adult jeans for $15 and children's jeans for $10 at Old Navy!

Dinner tonight... Creamy potato soup with bacon

I still have a ton of cooking to do for Christmas Day so I wanted to make dinner tonight easy.  I made this before and it was super easy and good.   It's also an inexpensive meal too.  You can do this with or without the bacon if you have a vegeterian in your family.

Potato Soup
6 slices of bacon (about 6 oz.)
1 onion, diced
1 clove garlic, chopped
1/8 tsp. dried thyme
3 baking potatoes (about 2 lbs. total), peeled & cute into 1/2" pieces [I used about 8 smaller baking potatoes]
3 1/2 cups low-sodium chicken broth
1 cup sour cream
salt & pepper
2 tsp. minced fresh chives

Prep:
In a large pot over medium-high heat, cook bacon, stirring occasionally, until crisp and browned, 6 to 8 minutes. Transfer to paper towels to drain. When cool enough to handle, crumble.

2. Discard all but 2 Tbsp. fat and return pot to medium heat. Add onion, garlic and thyme and sauté until onion is soft, about 7 minutes. Add potatoes and broth; bring to a boil. Reduce heat to low; simmer until potatoes are tender, 12 to 15 minutes. Working in batches, process in blender with sour cream until smooth. Season with salt and pepper.

3. Ladle soup into bowls and top with chives and bacon.

FREE Christmas road trip activity book

Are you traveling this Christmas?  You may want to download this Road Trip activity book.

There are all sorts of activities, Christmas carols, cute coupons that kids can make for parents and more. Even if you are not traveling, this may keep some hands busy during these hectic weeks when they are off from school, etc.

Magazine subscription for $5

There are a lot of new subscription deals on Amazon this week.  Sunset magazine is a  great place to find grocery coupons. It retails for $60/yr, but this week you can get a one year subscription for just $5!  This would be a great Christmas present if you're still looking for someone.

No recipe Mexican Pizza

We had tacos the other night so I had some leftover taco meat & beans that I wanted to use up.   I had some whole wheat pizza dough for Trader Joes too so I thought I'd throw a Mexican pizza together.  You could even use the pizza dough in the tube from the grocery store but I find that more spendy than TJs.   You could also use a burrito size tortilla.

I like to cook the dough first before putting any toppings on.  I usually cook for 6-8 minutes at 400 degrees.

As the sauce you could use any kind of salsa.  I used roasted tomatoes (drained so it wasn't too wet).   I then sprinkled the (leftover) taco meat & some black beans over the top of the salsa/tomatoes.  You could use refried beans too.   I then added some roasted corn from TJs.   You could use canned/frozen corn too.  [Note: if you use a frozen corn, cook the corn a little bit before putting it on your pizza.]

You can add anything else you might like... black olives, green onions, cilantro, etc. I then topped with Mexican cheese or you could use cheddar cheese.

Cook again for 8-12 minutes or until the top is slightly browned & bubbling.   I added sliced avocado & sour cream on top when it was done.

We gobbled most of it all up :)  Enjoy!

Feeding a family for $75 a week!

I have read amazing things about this book~ Family Feasts for $75 a week.  The mom who wrote this book has TEN kids (yikes!) and feeds her family for only $75 a week!  I don't have this book yet but it's going on my Amazon wish list.  It's very inexpensive (less than $13!) and would be a super gift for someone you know. :)
