Black Friday, Black Weekend & Cyber Monday

My inbox has been going crazy today with all the 'hot' deals.  Thankfully I'm almost done shopping.  Lots of tempting things.  We did get our son a Fisher Price Smart Cycle Racer Bike today which was on a great sale on Amazon.  Save an additional $15 with this code (FPBF5015)  plus free shipping with Amazon Prime.

A few of the treats I made recently

I thought these Mac & Cheese Muffins were amazing.  I'm a sucker for mac & cheese and these are a bit healthy with pureed butternut squash.   I'm also a sucker for butternut squash.

Yummy Sweet Potato Casserole... this was amazing!!!!  It was more like a dessert.  The first reviewer had a few suggestions so I used those.  I substituted evaporated milk for regular milk.  Doubled the amount of sweet potatoes, only used 1/4 cup of sugar (I used agave), double the vanilla up to 1 tsp.  I added 1 tsp of cinnamon, 1/4 tsp of both ground clove and ground nutmeg.   Another big key to this is doubling the topping which is the best part ;)

Pumpkin Chocolate Cheesecake Bars... yummmmmy!  Big hit on Thanksgiving.

Pumpkin Walnut Biscuits... these were very good.  Something a little different and a good way to use up the leftover pumpkin from the cheesecake bars.

Crockpot Breakfast Casserole... delish!!!  I made this for dinner last week.  You could use any breakfast meat you'd like.  Any type of cheese, etc.  Very easy.

80% off at Restaurant.com

Restaurant.com has a new code that will save you 80% on your purchase.

Use Code: SAVE to save 80% off the already discounted prices.

Make sure you read the fine print. Some offers have to be used on a minimum purchase of $35 and there is an 18% Gratuity added before the discount. But it still makes for a great deal!  These make great Christmas gifts.  I'm giving quite a few this year.

Happy Thanksgiving!!

Happy Thanksgiving to you & your families.

I saw this and it made me more thankful!!!  Hope you enjoy it too.

It's that time of year to really reflect on life and things to be thankful for. In a time when the economy hasn't been kind to everyone, it's important to know we're all very fortunate in some way, shape or form... and that encourages an attitude of gratitude. In fact, here are a few things many of us can be thankful for...

•If you have food in your fridge, clothes on your back, a roof over your head and a place to sleep... you are richer than 75% of the world.

•If you have money in the bank, your wallet and some spare change... you are among the top 8% of the world's wealthy.

•If you woke up this morning with more health than illness... you are more blessed than the million people who will not survive this week.

•If you have never experienced the danger of battle, the agony of imprisonment or torture, or the horrible pangs of starvation... you are luckier than 500 million people alive and suffering.

•If you can read this message... you are more fortunate than 3 billion people in the world who cannot read at all.

FREE items with coupons:  icing, 2 beef broths, sausage, Yobaby yogurt and one package of potatoes.

The turkey was only $5 and 10 lbs. of potatoes were 99 cents!!!

I'm donating both of these to a family which we've adopted for the holidays.

Grand total for all of this was $13.18!!!

last minute steal...

Ralphs had a mega sale that ended tonight.   I ran down for a quick trip PLUS they just announced that they will double $1 coupons until Thanksgiving!!!  In the past, they hadn't doubled the $1 coupons.  This made for some sweet freebies.

I scored all of this for $3.74!!!   The Almond milk, cookies, Pringles, gum, oatmeal & pasta were free!!! :)

saved $39!!!!!!

Spaghetti Squash (fake out) Pasta

I made Spaghetti Squash Pasta last night and both my husband and son thought it was pasta!!! ;)    Little did they know that I tricked them with a veggie.

I found a huge spaghetti squash at Trader Joe's for $2!!!  You slice in in half then scoop out the seeds and the guts and you are ready to go.  You can roast it in the oven or the microwave.  I tried the microwave and it was very fast & excellent!

Place the cleaned out squash cut side down on a plate and cover loosely with plastic wrap.  Cook for 10-12 minutes or until the skin slightly pulls from the squash.

While the squash is cooking, I made the spaghetti sauce.  You can use jarred sauce or a combination of canned tomatoes and tomato sauce. You can add ground beef, turkey, veggies, garlic, spices, etc.  Whatever you like on your 'normal' spaghetti.

Once the squash is done, bring it out of the oven/microwave and let it sit a couple of minutes.  Then take a fork and pull/shred the squash.  It will come off looking like pasta.  Continue until all the squash is done.  I added a little bit (2 tablespoons) of butter to the shredded squash.  You don't have to do that.

Put the squash on the bottom of a plate then add the spaghetti sauce.  Top of cheese and you are ready to eat. :)   You could serve with garlic bread or a salad.  Enjoy
